To enhance your cold and warm dishes with the classic flavor of the rare black truffle (tuber melanosporum). Delicious on salads, pasta, risotti, meat carpaccio, meat fillets, cheese and eggs. Our extra virgin olive oil comes from an ancient oil mill, situated on Lake Trasimeno (Umbria ). Hand picking and cold crushing the olives are still carried out according to the ancient processing techniques of the oil tradition and they guarantee a very high quality product. The oil is green with some golden glints. Its bouquet is of fresh vegetables, almonds, fresh flowers and fruit. The taste is fruity, delicate and harmonious. These characteristics are excellent for combining with the flavor and taste of white and black truffles.
The Truffle Caviar is made from the black winter truffle juice, which is obtained directly from the fresh truffle during the cooking. The tasty juice is then reduced in small pearls through a very sophisticated technique called "sferification". These pearls have the taste of the truffle but the same color and texture of the caviar.
