The classico posseses a rich, nutty flavor, with hints of grass and brine.
Grana Padano is a sweet-scented semi-fat cheese with a delicate flavor and a hard and granulose paste, after being cooked and left to mature. It is made with partially skimmed cow milk naturally risen to the surface in open-top stainless steel basins. Grana Padano is a highly versatile cheese, when young, it is best eaten raw since it is softer and delicate. When it is mature and grated, its more distinct flavor enhances soups, risotto and pasta dishes.
A mix developed to facilitate the production of pizza dough “in pala alla romana”. This special mix is particularly suitable for processing direct and indirect doughs and guarantees extreme lightness and digestibility. With Ciabatta Romana, the dough develops a very alveolate crumb crunch and a crispy crust, light on the palate. Its particular composition (which includes Mother Yeast Naturkraft) makes it particularly suitable for doughs requiring long maturations at controlled temperature (refrigerator).
This is no ordinary Parmigiano-Reggiano! Made from only brown cow's milk ?solo di bruna,? this cheese contains more casein which is a protein that gives the cheese a wonderful depth of flavor. The cheese is then aged for 24 months to lock in the unique creaminess that only Bertozzi can offer.
