It gained popularity in the 1970s, when a variation won a national recipe contest in Italy. The vodka’s function is to release flavors in the tomato that are normally inaccessible.

This was an excellent vodka sauce – no artificial taste detected and no soy (my daughter has a soy allergy). I fried up some sausages and mushrooms, added a can of crushed tomatoes and spices, then add the jar of vodka sauce and extra cream. It fed a group of 9 for a prima course. Everyone loved it.
