Straw yellow in appearance, it releases subtle, refined notes of Meyer lemon, green pepper, tomato leaf, grapefruit and ripe peach. The palate is crisply refreshing, lively, with a velvety mouthfeel and an admirable balance.

Production Notes: The grapes are destemmed and crushed, then the must is immediately chilled to 12°C and left in contact with the skins for 18-24 hours, so that the natural enzymes can ensure the extraction of aromatic compounds contained in the skins and enhance the structure and varietal qualities of the wine. The must is then carefully drained off the skins, gravity settled, and fermented at a controlled temperature for about 20 days. Maturation: Six months in steel casks and 2-4 months in the bottle.

Pairings: A perfect aperitif wine, this Sauvignon is delicious with vegetable crèmes and soups, and utterly superb with shellfish like prawns, lobster, and crab. A classic pairing with Sauvignon in Friuli is the succulent grilled Branzino from the Adriatic Sea.
About Sauvignon Blanc: Sauvignon Blanc from Friuli is considered to be the midpoint between those from Sancerre and those from New World countries like New Zealand. Generally, the grape showcases less green notes and bell pepper aromas than a New Zealand Sauvignon and picks up more of the riper fruit notes found in Sancerre. Friulian Sauvignon is considered also to have good ageing potential due to the acidity and minerality found in the wines from the region, as it loses its green aromatics over the years, and is replaced by candied fruit and nutty aromas.
