Lush aromas of wild strawberry, acacia blossoms and pecorino cheese hint at the complexity of this copper-hued wine. On the palate, a racy minerality is tempered with lush tropical fruit such as papaya and lychee, and a mid-palate of quince chewiness and pithy tannins give the wine weight and balance.  Bitter almond skin and a kiss of rustic pre-Alpinian honey lead to a round mouthfeel and a long finish, allowing this wine to go from refreshing aperitivo to a featured wine during the meal.

Production Notes: The berries are de-stemmed and gently pressed to produce high quality free-run juice.  The skins are then macerated with the juice for 48 hours before fermentation in order to gain the unique copper hue, as the skins of the Pinot Grigio grape are in fact pinkish in color.  The resulting must is chilled to 10-12°C to undergo a chilled fermentation.  20% of the wine is aged in neutral oak in order to stabilize the color.  Maturation: Six months in steel casks and 2-4 months in the bottle.

Pairings: Ideal with prawn and mushroom risotto, it is also a beautiful aperitif with raw seafood and shellfish; proscuitto and melon along with heartier pasta dishes and mountain cheeses like Primo Sale, Pecorino, Piave and Montasio, best enjoyed as Frico Friulano.

About Pinot Grigio Ramato: Considered the traditional method of producing Pinot Grigio, the wine has enjoyed quite a distinguished history, dating back to the 13th century and the preferred style of the Republic of Venice. Also known as Pinot Gris in France, it is a pale-skinned mutation of Pinot Noir, and often picks up much more complication and intrigue when allowed to macerate on the dark pink skins of the grape, usually at a minimum of 24 hours. The ramato style retains the freshness and lively fruit and acid character of a well-made Pinot Grigio, but the skin contact adds much character, depth and complexity by offering some red berry notes and hints of dusty fruit tannin on the palate.

About Valentino Butussi: A small family estate of 15 ha located in Corno di Rosazzo, within the prestigious Colli Orientali del Friuli DOC, this 100% organic winery is now run by the 4th generation of Butussi kin and focuses on pure expressions of the region’s most celebrated varietals.  Friulano, Sauvignon, Pinot Grigio Ramato and Ribolla Gialla are all deeply rooted in the calcareous-rich clay marl and sandstone of the area, and are translated into the bottle with purity, complexity and elegance.
