Deeply intense ruby color followed by a fragrance of ripe red currants, cherries, plums and hints of baking spice laced underneath.  On the palate, a firmly structured mouthfeel of velvet tannins, elegant notes of tar, roses and leather coupled by a vein of fresh acidity keep the wine in balance and lead into a long, supple finish.  Drink now with 30-40 minutes of decantation or age 5-7 years in the cellar.

Production Notes: De-stemmed and crushed into stainless steel for a modern vinification, the juice is then macerated on the skins for 15-18 days in a cold soak before fermentation begins. Selected strains of yeast are used in fermentation, and following the wine is racked into new French oak barrels for 24 months, followed by an additional 6 months aging in bottle before release.

Pairings: Bold, savory and gamey meats like lamb and veal are ideal with Chianti Classico Riserva, as are aged cheeses.  A classic Tuscan pairing is Roasted Rack of Lamb with garlic and rosemary, served alongside piselli alla fiorentina (green peas with prosciutto or pancetta).

Grown all over the region, but especially in Central Italy, Sangiovese is the only grape allowed in Brunello di Montalcino, and the main grape in Vino Nobile di Montepulciano, Chianti, and countless other Italian blends. It tends to be earthy, spicy and naturally high in acidity and red fruit aromas.
