G. MILAZZO TERRE DELLA BARONIA BIANCO DOP 2015 (CATARRATTO)
Fresh aromas of a Sicilian wheat field in late autumn, with a palate of ripe white peaches, apricots and pink grapefruit, with a round fleshy mid-palate and a lovely bitter almond and mineral laden finish.

Production Notes: After harvest, the fruit was chilled down for 24-48 hours before pressing into several lots to yield the best must. After cold clarification, the must was racked and fermented at a low, controlled temperature with selected yeasts in stainless steel vats. After fermentation and a period of 6 months sur lees, the wines were blended and reassembled in stainless steel tanks. The 2015 Terre della Baronia Bianco was bottled in January 2015 after filtration and cold stabilization.

Pairings: Antipasti of caprese salad, Castellino Parmesan cream-stuffed olives, or calamari; delicate fresh cheeses such as Primo Sale Pecorino or Tre Stelle Mozzarella; Pasta alla Norma with Giuseppe Cocco Bucatini or Trapani-style couscous with fresh seafood and shellfish.
About Catarratto: The most widely planted white grape in Sicily, Catarratto is a full-bodied varietal, with distinct notes of straw, white peach, red apple, grapefruit and elements of nuts and herbs on the finish. Juicy textures and ripe lemon characteristics can be coaxed out of this varietal when planted at high elevation and when careful vinification techniques are used.
