Production Notes: Produced in the Método Classico (the classic Champagne method), the grapes for the “D. ZERO” were chilled after harvest for 24-48 hours before whole-cluster pressing took place in traditional basket presses. The various pressings were vinified separately using selected yeast strains in stainless steel tanks. At the end of the winter the base wines were blended to create the desired cuvée and bottled with the traditional liqueur de tirage in order to undergo secondary fermentation in the bottle. After 18 months of maturing on the lees, traditional riddling took place and after degorgement, the same base wine was added to replace the sediment lost and no additional dosage was added, therefore creating a “zero dosage” sparkling wine.
