Production Notes: Produced using the Charmat method, where re fermentation occurs in temperature-controlled, pressurized autoclave stainless steel tanks. After 3 months, the fine mousse is created, imparting the lively bubbles that makes Lambrusco famous. Allowing for further freshness, “Pra di Bosso” Lambrusco is produced to order.
Tasting Notes: Ruby red with notes of purple violets. Blueberry and raspberry fruits leap out of the glass, and lead into a balanced palate, showcasing a fruity, flirty medium body, with intense flavor and a slightly tannic finish.
Pairings: Cured meats like mortadella and Genoa salami; Parmesan Reggiano and aged mountain cheeses; oven-baked pasta dishes, polenta with Lardo di Colonnata, tortellini in rich meat-based broths.
About Lambrusco: Lambrusco is both the name of the grape and the name of the official zones in which it is made. The major cultivars used are grasparossa, salamino and sorbara, and production of these grapes into wine date back to the Etruscan era. Those labeled Lambrusco di Sorbara tend to be more fragrant; while Lambrusco di Grasparossa more tannic. The wine is typically fruity and fizzy, but features tannins and a medium weight body that can pair with richer, more savory dishes.
