On the nose, delicate rose petals, dried cherries, tar and truffle hint to the complexity of the wine.  This leads to a gorgeously expressive mid-palate of cherries, the classic “tar & roses” and spices all balanced out with velvety tannins, dried floral notes and a lush, luxurious, long finish.  An extraordinary wine with tannin and acid structure to allow ageing for up to 20 years, when enjoyed young, it is best to allow 1.5-2 hours decantation time in order for the wine to fully express itself.

Production Notes: The ripe grapes were crushed and left to ferment in stainless steel tanks for 20 days at a controlled temperature of 23-25°C. The wine matured for 29 months, partly in 225L barriques and partly in 500L tonneaux, followed by 12 months aging in bottle. 2,500 bottles produced.

Pairings: Veal Osso Bucco, stuffed squab with fall vegetables, risotto with wild mushroom or truffle, braised beef cheek; cheeses such as Robiolo, grana padano and ‘toma’-style cheeses along with goat and sheep milk cheeses.

About Barolo: The classic Barolo style is indicated by the famous “tar and roses” aroma, a bright ruby color (which fades to garnet over time), firm tannins, elevated acidity, and relatively high alcohol.

To earn the name Barolo, the wines must undergo at least 38 months’ aging prior to commercial release, of which 18 must be spent in barrel (the remainder in bottle). For the added designation of riserva, the total aging time increases to 62 months. As the tannins soften over time, the complexity shows through with hints of earth, truffles and dark chocolate.

Classic Barolos have traditionally required at least ten years cellaring to tame their tannins. The Cannubi Boschis cru is one of the great cru vineyard sites of the entire Barolo region. Its name is synonymous with a degree of ripeness, richness, freshness and complexity that is known throughout the world.
